There are a few signs of life popping up around here. 

 

 

 

Oregonians wait anxiously for the awakening of these critters and the first blossoms of the year.  It means that even though we can expect the usual wet spring, the colors of the season will make it all that more pleasant.

There is another blossom that brings a smile to anyone’s face.  It’s the Chocolate Blossom.  Have you planted it yet?  No?  Then by all means, follow these simple steps and I promise you won’t have to wait days to enjoy the results of your labor.

Ingredients:

48 Hershey’s Kisses, unwrapped

1/2 c shortening

1 c. creamy peanut butter

1/2 c brown sugar

1/3 c granulated sugar

1 egg

2 Tbsp milk

1 tsp vanilla extract

1 c flour

1/3 c cocoa

1 tsp baking soda

1/2 tsp salt

Directions:

Preheat oven to 375 degrees

Beat shortening and peanut butter in a stand mixer until well blended.  Add brown sugar, 1/3 c granulated sugar and beat until fluffy.  Add egg, milk and vanilla and beat well.  Stir together flour, cocoa, baking soda and salt.  Gradually add to peanut butter mixer until combined.

Shape dough into 1 inch balls.  Roll in some granulated sugar and place on an ungreased cookie sheet.

Bake 8-10 minutes or until set.  Immediately press chocolate kiss into the center of each cookie.  It’s normal for cookie to crack around the edges.  Remove cookies to wire rack to cool.

Makes about 4 dozen.
